Quick and Easy “Dumplings with Vegetables” Recipe

One of the first meals my mom taught me to make was dumplings using a flour-based product called Bisquick. Today, I’m going to teach you how I make dumplings with vegetables using Bisquick.

This meal is fairly easy to make and requires few ingredients.

Ingredients

(try to use organics whenever you can)

  • 2 cups Bisquick
  • ⅔ cup milk (I use skim milk, but you may use whole, 2% or 1%)
  • 2 cans of chicken noodle soup
  • 21.5 ounces water
  • ¼ cup corn (for in the dumplings)
  • ½ cup zucchini (for in the dumplings)
  • 1 cup zucchini (for in the soup)

Food Items You Will Use To Cook This Meal

I learned to make this using Campbell’s Chicken Noodle soup. It always came out great.
A quart of skim milk, a box of Bisquick to be used in a dumpling recipe, a cup of zucchini, a half cup of zucchini and a quarter cup of corn sitting on a kitchen counter.
Bisquick went on sale in 1931 as a ready-to-bake biscuit mix.

Start the Soup Cooking and Add Zucchini

Empty the contents of the two cans of soup into a large cooking pot (this is a 6-quart pot). Do not throw the cans away.

I love my GreenLife Healthy Ceramic Nonstick 6-quart stock pot with a strainer lid. It is cited as being dishwasher safe (but I wash all my non-stick cookware by hand). The GreenLife lid is great for venting. I use it for boiling and straining too. It has small and large straining holes on either side of the rim. See the holes in front? This side has large holes, the other side has small holes. It now comes in different colors. I just ordered myself another one (a pink one), for when I need 2 large cooking pots. Fill each can to the top with water and add the water into the pot (now you can throw the cans away).

Stir the soup and water then turn the burner to high.

Bring the soup to a boil.

Add 1 cup of finely cut zucchini…

One cup of finely cut zucchini in a one-cup measuring cup is sitting on a counter.

Into the boiling soup.

One cup of finely cut zucchini is being poured into a six-quart stockpot, that has two cans of Campbell's Chicken Noodle Soup, combined with two cans of tap water that have been brought to a boil in the pot.

Turn the burner to medium.

Mix the Bisquick, Milk, Corn and Zucchini Together

Measure 2 cups of Bisquick.

Sitting on a counter is a Pyrex brand two-cup measuring cup with two cups of Bisquick measured into it.
I use the 1 cup, 2 cup and 4 cup Pyrex measuring cups often. They are great when measuring dry, wet or hot ingredients. The handle keeps you well away from hot ingredients (like boiling water, milk or broth). If you are considering buying a set, click here.

Pour it into a mixing bowl.

Measure ⅔ cup milk.

Sitting on a counter is a two-cup Pyrex brand measuring cup with two-thirds of a cup of skim milk measured into it.

Pour it into the Bisquick in the mixing bowl.

A two-thirds cup of skim milk is poured from a two-cup Pyrex brand measuring cup into a green mixing bowl that has a measured amount of Bisquick in it.

Add in ¼ cup corn.

A quarter-cup of corn is poured from a measuring cup into a green mixing bowl that has a measured amount of Bisquick and milk in it.

Add in ½ cup zucchini.

A half-cup of zucchini is poured from a measuring cup into a green mixing bowl that has a measured amount of Bisquick, milk and corn in it.

Stir together using a fork.

Two cups of Bisquick, two-thirds cup of milk, a quarter cup of corn and a half-cup of zucchini are being mixed with a fork in a green mixing bowl that is sitting on a counter.

Continue to stir until the mixture becomes a thick dough.

Drop the Dough Into the Soup

Scoop out a heaping spoonful of dough.

I use one of the tablespoons from my everyday silverware set.

To give you an idea of size, the spoon I am using is the 4th from the left.
A mixture of Bisquick, skim milk, corn and zucchini are now mixed to a dough-like consistency and are being spooned up to drop into boiling soup.

Drop each spoonful of dough into the soup. The liquid surface area will become less every time you drop dough into the soup. Try not to drop dough on top of dough for as long as possible.

This batch of dough made 12 spoonfuls that I could drop into the soup, but your batch may make 11 or 13. It all depends on the size of the spoonfuls you make.

A mixture of Bisquick, skim milk, corn and zucchini are now mixed to a dough-like consistency and are being spooned up to drop into boiling chicken noodle soup.

Cooking the Dumplings

Once all of the dough is in the pot, continue to cook it on medium for 10 minutes without a lid.

Twelve spoons of a dough-like mixture of Bisquick, skim milk, corn and zucchini have now been dropped into boiling chicken noodle soup and have cooked for 10 minutes uncovered.

At the end of 10 minutes, cover the dumplings with a lid and cook for 10 minutes more.

Ten minutes of cooking have passed and now a lid has been added to cover the dumplings that are cooking in the chicken noodle soup.
Twelve dumplings are done cooking which have cooked for ten minutes uncovered and another ten minutes covered in a pot of chicken noodle soup.

Serving

This recipe made 12 dumplings. That is 4 servings with 3 dumplings per serving. I hope you are hungry.

If you can’t eat all of the dumplings, they warm up nicely in the microwave.

The flatware is the Oneida brand. The pattern is called Copeland. It is nickel-free (identified as 18/0).
The dishware is Mikasa brand. The pattern is called Precious Blue Michelle D2501.
The champagne flute is Mikasa’s Uptown Wedding toasting glass.
The salt and pepper shakers are Anchor Hocking, a vintage Star of David pattern.
The candle holder is Gorham of West Germany.
Most of the items sitting on the table, I found while treasure hunting. Ask me about treasure hunting someday.

It’s All Relative

One of my cousins invited me to dinner at her house. She had set her table to serve 10 people. What I found was that each place setting had an entirely different pattern of dinnerware. Her table was both beautiful and fun because each guest could choose which place setting they wanted to use (unless one of the other guests had already claimed that place).
