My Husband’s Chicken, Vegetable Soup with Mini Farfalle

My husband makes the best soup, Yum !!!

Ingredients, (try to use organics whenever you can).

Ingredients for baking 2 Boneless, Skinless Chicken Breast;

  • Spray Avocado Oil
  • 2 Boneless Skinless Chicken Breasts
  • A pinch (which is 1/16 Teaspoons) Coarse Kosher Salt
  • A pinch (which is 1/16 teaspoon) Coarse Ground Pepper
  • A pinch (which is 1/16 teaspoon) Granulated Garlic.

Ingredients for cooking in the soup pot;

  • 1 cup Shredded Carrots, (Julienned Carrots may be used instead of Shredded)
  • ½ cup Frozen Whole Kernel Corn
  • 1 cup Sliced Baby Carrots
  • ½ cup Sliced Celery
  • ¼ cup Yellow Onion
  • 2 quarts, (which is 8 cups), Chicken Stock
  • 1 and ½ teaspoon Italian Seasoning
  • 2 teaspoon Coarse Kosher Salt
  • 1 teaspoon Lemon Juice
  • ¼ teaspoon Fine Ground Pepper
  • 2 cooked Cubed Boneless and Skinless Chicken Breasts
  • ⅓ cup Long Grain Brown Rice
  • 1 cup Mini Farfalle Pasta

Begin By Baking the Boneless, Skinless Chicken Breasts

Set the oven rack to the center position in the oven and preheat to Bake at 350 degrees.

Cover a baking tray with aluminum foil, (my husband always places aluminum foil on the baking tray, to protect it and for easier clean up).

The aluminum foil can easily be thrown away after use.

Spray the aluminum foil with avocado oil.

If this sprays out too heavily in one area, use a paper towel to spread it evenly where the chicken will be placed.

Place 2 raw boneless skinless chicken breast on the baking sheet.

Sprinkle a pinch of coarse kosher salt on the chicken breasts.

This is a picture of one of the 2 raw chicken breasts. It has coarse kosher salt on it. This and the 2 pictures that follow, should help you to visualize the quantity of seasoning for each chicken breast.

Sprinkle a pinch of coarse ground pepper on the chicken breasts.

Now, the breast has coarse kosher sale and coarse pepper on it.

Sprinkle a pinch of granulated garlic on the chicken breasts.

Now, the breast has coarse kosher salt, coarse ground pepper and granulated garlic on it.

When the oven is at 350 degrees, put the baking tray of chicken on the center rack and bake uncovered for 30 minutes.

Prepare the Vegetables and Seasonings, (Place them in the Cooking Pot)

Rinse all of the vegetables.

Put 1 cup of shredded or julienned carrots in the pot.

These are organic julienned carrots. You can shred a carrot yourself, but this is so much easier.

Put ½ cup of frozen corn in the pot.

Slice baby carrots until you have 1 cup. Put it in the pot.

We found this Royal brand bamboo cutting board on Amazon, as part of a set of 3, (one small one medium and one large size).

You may not know this, but bamboo is a hard wood. Bamboo is not a tree, but a grass. Even though it is a grass, it is harder than oak. Bamboo will grow to maturity, ready for harvest, in 3 to 5 years. Oak matures in 20 to 30 years. It makes more sense to harvest bamboo than oak for the sake of cutting boards. The next time you want to buy yourself a nice set of cutting boards, save a tree and purchase bamboo cutting boards.

We kept the medium and the large size cutting boards for the house and the small one has a permanent home is out trailer.

Slice, then cut celery until you have ½ cup.

When you are done cutting the vegetables, then the meat, make sure to wash the cutting board with hot soapy water, then stand it to dry. Periodically, it is good to treat the surface of the wood with food grade mineral oil.

Put the celery in the pot.

Always scrape cut foods from a chopping block with the blade up, (be very careful to avoid injury, as the blade is sharp). Scraping with the blade up reduces damage to your cutting board and helps to keep your knife sharper longer.

Peel and dice a yellow onion until you have ¼ cup. Put it in the pot.

I love my Greenlife Soft Grip Diamond, Healthy Ceramic Nonstick 6 QT Stock Pot with Strainer Lid. It is sited as being dishwasher safe.

Pour 2 quarts, (which is 8 cups), of chicken stock into the pot and stir these ingredients.

This pot is dishwasher safe according to the manufacturer, (but I do wash it by hand).
You will need to use 2 of these quarts, for this recipe.

Turn the burner on the lowest setting, under the cooking pot.

Add 1 and ¼ teaspoon Italian seasoning into the broth and stir.

You may already have Italian seasoning at home. We like this brand, and it’s organic.

Add 2 teaspoon coarse kosher salt into the broth and stir.

You don’t have to use kosher salt, but you will need to use coarse ground salt, to come close to the same taste as in this recipe.

Add ¼ teaspoon fine ground pepper into the broth and stir.

Add ⅓ cup Long Grain Brown Rice into the broth and stir.

Add 1 teaspoon lemon juice into the broth and stir.

Add the Baked Chicken Breast to the Cooking Pot

When the chicken breasts have baked 30 minutes, remove them from the oven, slice the chicken breast.

Slice the chicken breast.

Next cube the chicken breast and put it into the pot.

Cubing the chicken breast, (bite sized).

Stir again and put the lid on the pot. The ingredients in the pot at this point, should cook for an hour and a half minimum.

The GreenLife lid is great for other purposes too, (like boiling and straining the water off of spaghetti). It has small and large straining holes on either side of the rim, (see the holes left and right)?.

Now, The Farfalle

20 minutes before the soup is to be served, add 1 cup of mini farfalle, (stir from time to time).

I try to use organics, whenever I can, but I do really like the way the Barilla Mini Farfalle comes out in the soup.

Serve the Soup Hot

This is simply soup, water, cranberry juice and a couple of biscuits, but if you dress it up with pretty crystal, silverware and dishware, it becomes something more, (a joy to behold).

The salt and pepper shakers were handed down to me from my mom.
The flatware is Oneida. The pattern is called Copeland. It is nickel free (identified as 18/0).
The stemware is Cristal D’Arques of France. The cut pattern is called Longchamp.
The dishware is Mikasa. The pattern is called Precious Blue D2501.
There are 13 items in this picture, sitting on the table cloth and placemat. 7 of them, I found while treasure hunting. Ask me about treasure hunting some day.

I’m allergic to nickel. Did you know, as of the time of this writing, up to 17% of women are allergic to nickel and 3% of men are too. Most flatware found for sale has nickel in it.

The Copeland pattern is nickel free and is still available through Onida.com. I found a similar pattern on Amazon, also by Oneida. The pattern is called Reyna. It too is 100% nickel free, identified as 18/0, (18% chromium 0% nickel).

If you like this pattern, but aren’t able to find it, in the link above you may see other patterns you like. Just make sure you select a pattern that says it is 18/0 if you want nickel free flatware.
