Simple “Fluffy Scrambled Eggs” Recipe (cheese is optional)

I am cooking these eggs using one of my favorite GreenPan frying pans.

I realize some people may say that scrambling eggs is very basic (simple they might say). They may say anyone can scramble eggs. That is somewhat true, except many can’t scramble eggs well. I am going to teach you how to do this simple task, well.

To begin, you should use a good non-stick pan. I’m sure many of you have experienced your non-stick pans sticking anyway but this recipe should help relieve that.

Ingredients

(try to use organics whenever you can)

  • 6 large white or brown eggs (6 large eggs will serve 2 to 3 people).
  • 1 tablespoons butter
  • ⅛ teaspoon salt
  • ⅛ teaspoon pepper
  • ½ cup grated sharp cheddar cheese

Note: Cheese is optional. Additionally, you may prefer to use a different strength of cheddar or a different type of cheese altogether. I’d suggest you use sharp cheddar the first time and experiment next time (the choice is up to you).

Begin By Breaking Eggs, Adding Seasoning and Mixing All Together

Break the 6 eggs into a bowl (discard the shells).

Add ⅛ teaspoon salt.

Add ⅛ teaspoon pepper.

Six raw eggs have been broken into a green mixing bowl, salt and pepper have been added and they are about to be whipped by hand.

Mix these ingredients until the yolks are broken and all of the seasoning is distributed throughout.

Now It’s Time to Start Cooking the Eggs

Add 1 level tablespoons of butter (or margarine) into the frying pan.

Turn the temperature under the pan to medium and let the butter melt.

I am allergic to nickel. I was told by my doctor to reduce my exposure to metals that can transfer nickel to me. That included all of my stainless steel pots and pans. My doctor told me to use pans with a ceramic coating inside. I found GreenPan which ticked this box for me.
If you would like a GreenPan frying pan, I suggest you buy one from the GreenPan Valencia Pro series.
If you don’t have any of these pans and you would like an entire set of the Valencia Pro, the price is much better in a set than when buying one piece at a time.

Spread the butter around the bottom of the pan before pouring the scrambled raw eggs in.

Six whipped raw eggs with salt and pepper are poured into the melted butter that is in the GreenPan frying pan.

The eggs are going to cook very quickly.

You do not need to move the eggs very much. If you move them too much, they will not come out very fluffy.

You will see the eggs begin to become solid around the edges. This is the 1st time you will move the eggs.

Move the spatula under the eggs, pushing them up, off of the bottom of the pan and sides (so the eggs don’t have a chance to brown).

The eggs in the GreenPan frying pan are just starting to become solid in the pan, so a spatula is being used to move them so they don't brown in the pan.

Here you can see I have moved the eggs up off of the pan twice now.

You will see the eggs become less and less runny as you move them in the pan.

Again, a spatula is moving the eggs so they don't brown in the pan, but so they become evenly cooked.

I moved them 7 times while they were still runny.

A spatula is turning the eggs over to make sure there aren't any runny eggs at the end of cooking them.

I turned them over on themselves 3 more times at the end of cooking (10 total moves). You may move them a little less or a little more, but the eggs are done when you don’t see any liquid runny egg left.

The eggs are fully cooked and somewhat broken into pieces.

Remove the eggs from the hot burner. You can serve them now (unless you want to add cheese to the eggs).

Adding Cheese

Before you add the cheese, push the eggs together into the center of the pan.

Add ½ cup grated sharp cheddar cheese over the eggs and cover with a lid. Once the cheese is melted, the eggs are ready to be plated up.

The eggs were moved to the center of the GreenPan, cheese has been added on top of the scrambled eggs and the cheese has melted.

Breakfast is Served

The stemware is Cristal D’Arques of France. The cut pattern is called Longchamp.
The salt and pepper shakers are Anchor Hocking, a vintage Star of David pattern.
The candle holder is Gorham of West Germany.
The butter dish and the crystal napkin ring seen here are as yet unidentified, but I’m working on it. Here is a link to a different pattern of napkin rings (Donoucls crystal napkin rings), that you might like.
Several of the items sitting on the table, I found while treasure hunting. Ask me about treasure hunting someday.
